Need a quick way to use up your leftover Costco rotisserie chicken? Ree Drummond (aka, the Pioneer Woman) is here to save you with her delicious, one-pan recipe inspired by Mexico street corn. According to the chef and lifestyle guru, this dish is full of “big flavor” with “super easy ingredients.” Now that’s our kind of meal!

Start by shredding rotisserie chicken (now is the time to use those Costco leftovers up!) and putting it in a mixing bowl with sour cream, softened cream cheese, and several other ingredients. You’ll also add a package of frozen corn mixed with red and green bell peppers, a sprinkle of chili powder, and a few more things, before you stir everything together.

“There’s a lot going on in this casserole, but none of it is complicated. The frozen corn, the rotisserie chicken. [It’s] really, really good!” Drummond says in a video of the recipe shared to Food Network’s YouTube Channel.

Next, create a bed of Spanish rice in an iron skillet. Drummond uses the microwave-in-a-bag kind to make it even easier! She dishes up the chicken mixture on top of the rice, adding shredded pepperjack cheese and more chili powder (of course, you can vary based on your own spice preferences!). The iron skillet casserole then goes into the oven all together, creating dinner in one pan!

Drummond served it with a tomato, avocado, and cilantro salad. The finished dish sizzles with golden brown cheese on top, and looks simply delightful. Garnish with more cilantro and cheese, then serve it. “You’ve got that creamy, cheesy chicken and that layer of rice underneath,” she says, showing off the layers of the dish as she scoops it up.

She finally tries her dinner, gushing about how it’s “easy to make [with] serious flavor.” We can practically smell the sizzling dish through our screens!

Not only is this recipe super easy, but it’s also perfect for putting your own spin on it. In the comments, people shared ideas to mix it up. “I might leave out the rice add some jack cheese and use the chicken mixture to fill corn tortillas for a take on enchiladas (with green enchilada sauce),” one person commented.
